Sour Cream Lemon Pie

Sour Cream Lemon Pie

Spring 2004

Ingredients:

1 c sugar
3 1/2 Tablespoons cornstarch
1 Tablespoon lemon peel (grated zest)
1/2 c freshly squeezed lemon juice
3 egg yolks, slightly beaten
1 c milk (whole milk preferably) 
1/4 c butter, melted
1 c sour cream

Directions:

Bake a piecrust until golden brown, using pie weights to keep crust from bubbling.

Mix first 6 ingredients in saucepan. Cook over medium heat until thick, remove from heat. Cool slightly, approx. 5 min., then add:

1/4 cup melted butter 1 cup sour cream. Place in baked piecrust. Chill at least 2 hours.

Serves 8-12
