Bacon Wrapped Dates

Spring 2004

Ingredients:

1 (8 ounce) package pitted dates
10 ounces white cheddar cheese, cubed
1 pound sliced bacon, halved
toothpicks soaked in water

Directions:

Preheat Broiler.  Slice open dates, and stuff with a cube of cheddar, wrap each date with a half of a bacon slice and secure with water soaked toothpicks.

Arrange wrapped dates on a medium-baking sheet lined with tin foil and broil 15 minutes in preheated oven turning once until bacon is evenly browned.

Note: Cheese will melt out of dates during cooking. The small amount of cheese that remains inside the date adds a tangy contrast, which compliments the rich and sweet bacon and date.
