1 pound large prawns (12 - 15)
3 - 4 ounces prosciutto, cut into strips (2" by 3" or enough to wrap the prawn once).
12 - 15 large basil leaves
2 Tablespoons butter
2 Tablespoons lime juice
1 teaspoon chili powder
Peel, de-vein, and clean prawns. Wrap each prawn in 1 large basil leaf or two smaller leaves, and 1 strip of prosciutto. Melt butter and blend in lime juice and chili powder. Baste prawns with this mixture while grilling. Grill until prawns are cooked, approximately 4 minutes per side over medium heat. Cooking time could vary depending on grill. Do not overcook. (You could also use skewers.) Serves 6 as an appetizer or 3 - 4 as a main course. Serve as a main course with asparagus or wild mushroom risotto.
