Melon Mint Salad

MELON MINT SALAD

INGREDIENTS:

• 1 large cucumber
• ½ cantaloupe
• ½ honey dew melon
• 3 limes
• 15 fresh mint leaves
• 2 Tablespoons fresh chives, chopped
• ⅛ cup Shirley Mays Chardonnay
• Salt
• Pepper

WINE PAIRING:

2014 Shirley Mays Chardonnay

COOKING INSTRUCTIONS:

Peel cucumber and slice into bite-sized pieces. Cut melons into bite sized pieces. Squeeze limes. Chop mint and chives. Mix all ingredients in a large bowl, add salt and pepper to taste. Chill before serving. This also makes a great dessert, simply leave out the chives and pepper.
