Pear and Fennel Salad

6 Tablespoons white wine vinegar
1 teaspoon crushed anise seed
2/3 cup extra virgin olive oil
2 fennel bulbs, thinly sliced
4 pears, thinly sliced
1/4 cup fresh parsley, chopped
Pecorino or Parmigiano-Reggiano cheese


Whisk white wine vinegar with crushed anise seed, salt and pepper in a serving bowl, then slowly whisk in the olive oil. Add fennel, pears and parsley. Season with salt and pepper to taste. Top with shaved Pecorino or Parmigiano-Reggiano cheese.
