Any size Prime Rib roast with or without bone
1/2 lb per person
Preheat oven to 550 degrees. Make a rub of salt, pepper and garlic powder and apply to all sides of the roast. Place roast in a shallow roasting pan fat side up.
Roast 5 minutes per pound for RARE, 6 minutes per pound for MEDIUM and 7 minutes per pound for WELL DONE. Turn off the oven at the end of the cooking time and DO NOT OPEN THE OVEN DOOR FOR TWO HOURS. At the end of the two hours remove the roast and slice to serve—it comes out perfect every time!
