1 whole Meyer lemon, or two if small (make sure it is a Meyer)
1 cup sugar
1 cube butter, softened
1 teaspoon vanilla
Deep dish pie crust
Put all ingredients in the blender for a couple minutes until completely mixed. Pour mixture into a deep dish pie crust, found in the grocery store freezer section. Bake at 350 degrees for 45 minutes. Let cool and place in refrigerator until served. Top with whipped cream.
