Ingredients:

2 whole chickens—quartered
Rub:
1 Tablespoon ground cumin
1 Tablespoon chili powder
1 Tablespoon ground cayenne
1 Tablespoon mustard powder
1 Tablespoon sweet paprika
1 Tablespoon onion powder
1 Tablespoon garlic powder
1 Tablespoon salt
1 Tablespoon pepper
1/4 cup granulated sugar
1/4 cup brown sugar

Directions:

Mix spices and sugars thoroughly. Rub generously on chicken pieces. Let rest one hour.

Roast at 400 degrees, 45 to 50 minutes or until juices flow clear.

Serves 8.
