2 fresh thyme sprigs
2 parsley sprigs
1 small onion, halved
1 roasting chicken, 5-6 lbs, well rinsed and patted dry
5-6 Tablespoons butter
Freshly ground pepper


Preheat the oven to 425 degrees.

Place thyme sprigs, parsley sprigs, onion and 2-3 Tablespoons of butter inside the chicken cavity. Season the inside of the cavity with salt and pepper. Truss the chicken. Liberally rub butter over the entire skin of the chicken and season with salt and pepper.

Roast, breast up, for 20 minutes. Place the chicken on its side and reduce the temperature to 400, roast for 20 minutes. Turn the chicken on its other side, reduce the temperature to 375, roast for 20 minutes. Finally place the chicken standing on its neck, reduce the temperature to 350 and roast 20 minutes or until the leg temperature measures 155-160 degrees. Carefully remove the chicken to a serving platter.

Serves 4-6.
