Spinach Salad

        

Spinach Salad

Pair this recipe with the 2008 Lewis Vineyard Riesling.

Ingredients:

2 bunches spinach
3 spring onions, diced including stems
1/2 cup mayonnaise
3 Tablespoons balsamic vinegar
3 Tablespoons water
2 teaspoons sugar
3 Tablespoons sundried tomatoes, diced
3 Tablespoons crumbled Feta cheese

Directions:

Rinse spinach and drain well.

Mix together spring onions, mayonnaise, vinegar, water and sugar.

Toss with spinach, garnish with sundried tomatoes and Feta cheese.
